Research shows that filling in more fields in the Product markup correlates with higher placement in the top 10 search results. While this doesn't prove a direct impact on position, it is an important aspect for better presentation of your product to search engines.

However, according to my personal experiments on hundreds of pages, a large number of reviews, although not in such a large sample, shows that the search engine begins to react to ratings and reviews when their number reaches 5-7 on the page. If you set 1-2 reviews, the search engine may display them in the snippet, but this will not lead to a real improvement in position.
